Coffee Lab is an authorized training center of SCA.
We directly source coffee green beans from around the world and with our passion for an excellent cup of coffee has lead to us to discover as much about roasting coffee beans and the incredible flavors and aromas associated with the process. Our coffee beans are included UTZ, Fair Trade, Rainforest Alliance and Organic , which are TRUE SPECIALTY green beans and approved from Specialty Coffee Association of America (SCAA), which score is more than 80 points, called SPECIALTY COFFEE. Using our Barista Skill , Sensory, Brewing, Green Beans, Roasting experience and years of industry knowledge, we are willing to assist our customers in selecting a single origin coffee or the blend that works best for their interest. We only roast coffee per your order and to keep freshness and quality. We also sell our coffees in our workshop in Y.M.T. and through our online store. We provide free shipping to all locations in Hong Kong. In addition to supplying coffee beans and equipment, we also provide practical Coffee Class in HK, e.g. SCA Brewing Courses, SCA Barista Courses, SCA Roasting Courses, SCA Brewing Courses, SCA Green Coffee, Latte Art Grading System. |
你可曾注意過我們平日飲入口中咖啡味道的不同. 在這裹, 我們將追尋咖啡的風味, 讓你知道何謂"好咖啡". 咖啡烘焙不只是一條直線, 好咖啡不只是栽種, 品種, 產地, 海拔高地等. 在相同的生豆下, 拙劣的烘焙技術對味道造成的傷害, 再棒的工具及技術都無法彌補. 咖啡的味道除了與生俱來外, 大多是取決於引出咖啡豆風味的烘焙程度. "好咖啡"可以定義為"優質生豆除去瑕疵豆後, 適當烘焙, 新鮮的時候正確萃取". 一杯好咖啡, 除優質生豆外, 新鮮烘焙是同等重要.
參觀左好多北歐和美加的精品咖啡店, 大部份都有自家烘焙咖啡豆, 香港都開始流行, 除了令消費者覺得專業外, 也令消費者覺得咖啡豆係新鮮烘焙. 無可否認, 新鮮烘焙豆對一杯咖啡不可缺少. 比較可惜的是,香港基於成本的考慮,並非所有的咖啡業者會認真地篩除瑕疵豆,而只是利用烘焙加工的技巧和販賣的手法使它們不見於世, 但有幾多消費者真正了解瑕疪豆其實可能係含有生物毒素, 而影響你的身體健康呢? 例如全黑豆/半黑豆, 黴菌破壞豆, 蟲蛀豆, 貝殼豆都可能含有生物毒素. 現時有些北歐咖啡店, 基於此原因, 表明自家烘焙的咖啡豆是經過篩選, 來換取消費者的信心, 並且在咖啡店裏,barista會將要煮給你喝的咖啡豆讓你看完再煮. 如果你係自己在家沖煮咖啡,為了你的健康著想, 也一定要挑選出可能存在的瑕疵豆之後再享用. |
